Blackened Swai Catfish


Blackened Swai or Catfish prior to placing in oven.

This is soo easy - I buy what ever fish I like that is on sale. This week is was Swai. A mild asian fish.


Catfish or Swai

Blackened Seasoning

Fresh Lemon

2 T Butter and Olive Oil

Salt and Pepper to taste


Heat oven to 350 degrees.

Use iron skillets if you have them. Heat skillets with the butter and oil. Add fish fillets skin side down - not crowding them. Sprinkle with seasonings and lemon juice. Bake for about 10 minutes or until flesh flakes. Do not overcook. Do not turn. If you want them to be brown, place under low broiler for just a minute or two. Don’t take your eyes off them.

Now how simple and nutritious is that?
