Or cornbread pudding; I didn't know exactly what to call it. It's a great side dish that goes in a hurry. Three recipes of this were made by my nephew's wife for an equestrian dinner at University Martin. They were all gone in a flash – hungry college kids.
1 box Jiffy cornbread mix
1 can creamed corn
1 regular can corn
8 oz. sour cream
1 stick butter melted
Directions:
Mix all together and place in a 8 x 8 pan, or similar oblong pan. Bake @ 350 for 45 minutes.
